Acacia gum has been used in food for centuries. What makes it exceptional as an emulsifier is the remarkable complexity of its molecular structure: a highly branched, heterogeneous polysaccharide with a large molecular weight range, whose unique physicochemical properties combine to stabilize oil-in-water emulsions in ways no single synthetic emulsifier can fully replicate.
The result is a three-mechanism stabilization system that no single synthetic emulsifier replicates: steric hindrance prevents droplet coalescence, electrostatic repulsion keeps droplets apart, and the dense interfacial layer adjusts droplet density to slow creaming. Standard flavor emulsions
The results from our most recent application trials are straightforward.
In a standard flavor emulsion formulation (8% D-limonene, 7% glycerol ester of wood rosin), Eficacia™ Advanced achieves full stability at 5% versus 18% for a standard acacia grade such as Instantgum™ AA. That translates to:

Beyond the standard flavor emulsion, trials have confirmed Eficacia™ Advanced performance across a wider range of applications.
High oil load emulsions

Where standard formulations work with 10–15% oil load, Eficacia™ Advanced has demonstrated stable emulsions up to 25% oil load at 10% dosage. This opens a range of applications where maximizing active payload per litre of concentrate is a direct competitive and logistical advantage: ultra-concentrated flavor systems for bag-in-box formats, functional shots requiring high loads of liposoluble actives (vitamins, omega-3, botanical extracts), where reducing shipped volume per unit of flavor directly impacts cost and carbon footprint. Applications that previously required synthetic emulsifiers or complex multi-ingredient systems can now be formulated with a single, 100% natural ingredient declared as “Acacia Gum” on the label.
Preservative-free emulsions without alcohol
One way to make emulsions without chemical preservatives is to use 15% alcohol. However, using high-concentration alcohol in industry is not that simple, and removing both preservatives and alcohol from a flavor emulsion is one of the most technically demanding challenges in beverage formulation, and one of the most commercially relevant.

The difficulty is structural. In a conventional flavor emulsion, alcohol (ethanol) or chemical preservatives, typically sodium benzoate (E211) and potassium sorbate (E202), form a multi-barrier system: alcohol disrupts microbial membranes and lowers water activity simultaneously, while benzoate and sorbate inhibit bacteria, yeasts and molds through different mechanisms. Removing all these barriers at once creates a genuinely vulnerable aqueous system. The established alternative is to use glycerin at 25% to bring water activity below 0.84, the threshold at which microbial growth is effectively inhibited. It works in principle, but introduces a new constraint: at that concentration, glycerin acts as a competitor for water that can destabilize the interfacial film of standard emulsifiers and trigger droplet coalescence. The emulsification and the preservation strategies work against each other.
Eficacia™ Advanced resolves the formulation tension directly. In a glycerin-based preservative-free system (25% glycerin, no alcohol, no chemical preservative), it achieves full emulsion stability at 6% dosage. The applications that need this solution are precisely those where label pressure is highest: natural and organic children’s beverages, where benzoate and sorbate have become retail barriers in most European markets; halal flavor concentrates, where any trace of alcohol is unacceptable; and premium functional shots, such as vitamins, botanicals, adaptogens, where the entire brand promise rests on a label that reads as completely clean. In all three cases, Eficacia™ Advanced delivers the emulsification without compromising the story on the pack.
Modified starch replacement
Based on current trial data, Eficacia™ Advanced can compete directly with modified starches at a 1:1 replacement ratio, bringing the performance and cost efficiency of a next-generation natural ingredient to formulations currently locked into modified starch systems.
